How do I protect/prioritize my management traffic? Is this possible at all?

Have a look at the Brocade ServerIron ADX Security Guide / Version 12.0.00 - there is a command to prioritize management traffic (SSH, telnet and HTTP so far):

Syntax: server prioritize-mgmt-traffic <source-ip> <mask> <destination-ip>

Have a look at the documentation to get some more details.

What happens with traffic coming from IP addresses I have not covered via the command mentioned above?

Traffic you have not covered using "prioritize-mgmt-traffic" is getting processed normaly.

You might want to have a look at the drop-all-mgmt-access command as well to drop unwanted mgmt traffic in hardware. The prioritize and the drop command are useable together.
