I have a client that we have configured cookie based persistence and SSL termination for. Everything is working as it should as far as the persistence, SSL termination, and load balancing goes.
The problem that we are having is that the customer's application creates a cookie for it to function properly. The ServerIron is overwriting this cookie and it breaks the application preventing it to work as it should.
Is there a way to append the ServerID= to the existing data within the cookie and then parse that out for persistence. Or is there another to tackle this issue that I am not aware of?
Any insight would be appreiciated.

We do exactly the same. THe ServerID portion of the cookie is not overwritten. Here is our setup:
csw-rule "cookie.persist" header "cookie" search "ServerID="
match "cookie.persist" persist offset 0 length 4 group-or-server-id
default forward 100
default rewrite insert-cookie "ServerID"
port ssl csw-policy "cookie.policy.8100"
Perhaps the application is overwriting the entire cookie? If so, you'll probably need to address the problem on that end...
